The Sheepmeat Language brochure provides the tools for objectively describing carcases on the slaughter floor.
Sheepmeat Language Categories are divided into Basic Category (Lamb / Mutton / Ram) and Alternative Categories are assessed by dentition with a range from zero to 8 permanent incisor teeth and all have unique ciphers codes.
Other objective measurements includes: Sex, Standard Carcase Trim, Weight Class, and Fat Score.
